Renowned for their commitment to quality and innovation, the Chacon family was among the pioneers of Honey and Natural coffees in Costa Rica during the 2000s.

Facing challenges after an earthquake disrupted water access, Oscar took inspiration from Brazil and Ethiopia, introducing Pulped-Natural and Full Natural techniques to process their coffee harvest in 2008. This innovative approach resulted in stellar fruit-forward cups with a smooth and delicate profile, yet brimming with exquisite flavors.

The Chacons take environmental impact seriously and are one of the few certified-organic fincas in the region. To combat changing weather patterns, they consider adding more shade trees and irrigation systems to their farm. By utilizing a Penagos demucilaging machine, Oscar significantly reduced water consumption during coffee depulping.

Harvesting and processing at Las Lajas are meticulously managed by both Oscar and Francisca. They carefully measure the cherry's Brix to ensure optimal ripeness, resulting in high-quality Naturals and Honeys. The Chacons produce various Honeys, where 100% of the mucilage remains on the coffee during drying, with each type dried in distinctive ways. Oscar's dedication to understanding the drying process leads to limited but exceptional coffee production.
